Cooking at Home: Blue Velvet Cupcakes with Cream Cheese Frosting

      James usually takes care of the savory and Aida makes the sweet part of meals.  However, the other night James decided to make some Blue Velvet Cupcakes with Cream Cheese Frosting. In reality they were supposed to be red velvet cupcakes but he ran out of red food dye and so they ended up being blue. Either way....they were delicious!

Blue Velvet Cupcakes:
    1. In a medium bowl combine these dry ingredients:
            1 1/4 cups of all-purpose flour
               3/4 cups of sugar
               1/2 teaspoons of baking soda
               1/2 teaspoon of salt
               1 teaspoon of cocoa powder
    2. In a large bowl combine these wet ingredients:
              3/4 cups of vegetable oil
              1/2 cup of buttermilk
              1 large egg
              1 tablespoon of your favorite food coloring color
              1/2 teaspoon of white distilled vinegar
              1 teaspoon of vanilla extract  
    3. Mix the dry ingredients with the wet ingredients in the large bowl
           -Mix the ingredients well! Mixing adds air to the batter, the more air the fluffier the cake
    4. Pour batter into a cupcake pan
           -This recipe makes a dozen cupcakes
    5. Bake in a 350 degree oven for 20-22 minutes
    6. Once done, let the cupcakes cool before frosting
    7. Enjoy!

Cream Cheese Frosting:
    1. In a large bowl combine these ingredients:
             8 ounces of cream cheese
             1 stick of butter
             1 tablespoon of vanilla
             2 cups of shifted powdered sugar
    2. Mix all the ingredients well
    3. Frost cupcakes
    4. Enjoy!

   If there are any leftover cupcakes we suggest keeping them in the refrigerator due to the cream cheese frosting. Also, you may divide the cupcake batter into different bowls, add the food coloring to the batter at the end. Add a different color to each bowl to make a fun assortment of different color cupcakes.
