Cooking at Home: Mac n Cheese

Restaurant quality at home! 

Last Sunday James' family was visiting from New York. He wanted to make a delicious, kid friendly meal with his sister who is eleven. What is more kid friendly than mac n cheese? This homemade, baked mac n cheese is sure to impress the little ones and their hungry parents!


Mac n Cheese:

    1. Make an Alfredo Sauce
          1. Slowly heat 1/4 of a gallon of milk with an onion cut into halves on a double boiler
                 -You want to heat the milk but do not bring it to a boil!
                 -Remove the onion before step 2
          2. Once heated add 2 cups of parmesan cheese, either grated or shredded
          3. Mix the sauce until the cheese is fully incorporated
          4. Add a pinch of salt
          5. Add a teaspoon of white pepper (regular black pepper will also work)

    2. Cook a box of elbow pasta
           -Remember to salt the pasta water, you want to add enough salt so that water tasted like the sea!
           -Cook the pasta a minute less than the box suggests! Meaning if the box says cook for 12 minutes, only cook for 11
    3. Strain the pasta once it is cooked
           -DO NOT RINSE THE PASTA! Rinsing the pasta takes away the starch and the sauce will not stick well to it
    4. Combine pasta with the Alfredo sauce
    5. Add a cup of cheese
          -James and his sister opted for a shredded cheddar cheese
    6. Put the pasta mixture into a greased, deep baking pan
    7. Sprinkle bread crumbs on top
          -We used italian seasoned breadcrumbs
    8. Bake for 10 minutes in a 350 degree oven
    9. Enjoy!
